味噌烏龍麵 Miso Udon Noodles

材料:
豬絞肉60公克、板豆腐1/2塊、烏龍麵1份、綠花椰菜數朵、薑末5公克

Ingredients:
60 grams ground pork
1/2 block tofu
1 portion udon noodles
A few broccoli crowns
5 grams ginger

味噌湯汁
A.
柴魚昆布高湯200公克、酒30cc、味醂18cc、糖15公克、醬油9cc
B.
味噌75公克

Miso soup broth
A.
200 grams bonito fish flakes and kelp soup stock
30CC rice wine
18CC Mirin wine
15 grams sugar
9CC soy sauce
B.
75 grams miso paste

作法
1. 綠花椰菜放入滾水中汆燙至翠綠色,撈起放入冷水中冷卻,瀝乾備用。
2. 板豆腐洗淨瀝乾。
3. 將湯汁材料A混合煮勻後,取適量與味噌混合調稀,再倒回湯汁中。
4. 取鍋燒熱,放入少許食用油,放入絞肉炒至鬆散,再放入薑末炒香。
5. 續放入豆腐略煎一下,再倒入作法3的味噌湯汁,燉煮至入味,再加入烏龍麵、花椰菜略煮一下即可。

Preparation Instructions
1. Place broccoli in boiling water and boil until emerald green. Remove and place in ice water to cool. Drain, and set aside.
2. Wash and drain the tofu.
3. Take the soup ingredients in A, mix and cook evenly. Take out a suitable amount of the soup, mix it with the miso paste to dilute it, then pour it back into the soup.
4. Heat up a pan, add a little cooking oil, add ground meat and stir-fry it loosely, then add ginger and stir-fry again.
5 Now add in the tofu, brown it a little, then pour in the prepared miso soup from step 3 and let it all stew for taste. Finally, add in the udon noodles and broccoli crowns.
